I’m a breakfast kind of girl. I believe in eggs and sausage. Bacon and pao de queijo. Sausage gravy and biscuits. Pancakes. . . I love breakfast. In fact, at least once a week we eat breakfast for supper! I suppose my love of the morning time meal has rubbed off on the kids because nearly every morning they request my make ahead pancakes.
These make ahead pancakes are crazy convenient. I keep baggies of the dry mix in the freezer so I can just grab a bag, add my milk, butter, and eggs and get them on the griddle in less than 5 minutes.
This recipe makes delicious, fluffy pancakes. You’ll get about 15 large (7″) or 40 small (3″) pancakes out of this recipe- which is perfect for my large family! On freezer cooking day I will often make a quadruple batch of these and stick them all in the freezer. They make a great on-the-go breakfast or snack.
Freezer Friendly Make Ahead Pancakes
What you need:
- 1 1/2 cups unbleached all-purpose flour
- 1 1/2 cups whole wheat flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 1/2 cups buttermilk
- 2 large eggs
- 1/3 cup unsalted butter, melted
What to do:
In a large bowl, combine the buttermilk, eggs, and melted butter. Stir in the dry ingredients, pour them into your desired medium and cook ’em!
