Foodie Friday! Fried Cheese Roll and Flaky Biscuits {Jan 9, 2015}

I take a lot of pictures of food. Food on my plate, food on the stove, food at the market. I love food. I enjoy cooking and eating almost as much as I *love* sleeping. Wow, that makes me sounds lazy. Oh well, I guess it is what it is.

Because I know so many of you out there enjoy food too, I thought I’d start sharing what goes on (food-wise ) in our house each week. I cannot promise that everything will have a recipe or even a how-to but at least you’ll get some inspiration, right?

Maybe if I can figure out how, I’ll start doing a link-up. Hmm… will have to think about that one.

Now you might be asking yourself why I would put pictures of glorious yumminess but no recipe. Well, my husband does a lot of the cooking around here- when he is home that is- and he doesn’t follow recipes. Ever.

Occasionally I hover over him as he works to create his magic, and I write down everything he does.

Sometimes that works. Sometimes I end up with unreadable scribbles.

What you see below is what he has dubbed a Cheese Roll. It looks like an eggroll or chimichanga but I assure you it is so much better. It is diced avocado, onion, ham and tomatoes all tossed in a delicious olive oil dressing and then rolled in FRIED CHEESE.

Are you hearing me??? FRIED CHEESE!!! Oh my goodness. When he whips these things up, I just melt.


These country-looking beauties are my favorite biscuit. I had some unexpected company over the morning I made these so I had to make the dough go a bit further than normal, hence the short biscuits.

They’re like the flaky layered biscuits you can get in the can but way tastier.

Ingredients
Servings: biscuits
Instructions
  1. Mix flour, baking powder and salt together
  2. Cut in the butter until it's about pea size
  3. Make a well in the flour mixture and add the milk. Stir until it forms a nice dough
  4. Turn the dough out on to a lightly floured surface and need few times
  5. Grab your rolling pin and roll it out to about 1/2" thick. Cut your biscuits out and bake them at 450 degrees for 12 to 15 minutes
  6. You can give them a nice milk or butter brush on top before baking them if you'd like. I tend to forget to.
