Summer Meal Plan

Having meals planned out in advance is not only a time saver, it’s a sanity saver too! I love, love, love being able to glance at a paper in the morning and know what to pull out for lunch (if necessary) and dinner.
I have always been a fan of filling my freezer with meals to be easily pulled out later. Over the years we have found some family favorites as well as some concoctions that leave us eating peanut butter and jellies for dinner! Some of my favorite go-to websites for freezer/crockpot cooking as well as meal planning in general are Money Saving Mom,  Heavenly Homemakers and Comfy in the Kitchen. These women offer yummy recipes that use real ingredients.

Summer Meal Plan

We just finished another day of freezer cooking and this time we did enough for the whole month! Or at least what is left of it. This time I went a step further and created meal rotations for breakfast and lunch. They look like this…

Breakfasts ~all are served with either a fruit smoothie or seasonal fruit
Monday – pancakes (this could be regular banana, blueberry or chocolate chip pancakes OR pancake/sausage muffins ) both can be made ahead of time!
Tuesday -oats (could be regular oats on the stove or baked oatmeal pulled from the freezer)
Wednesday – cereal
Thursday – eggs and toast (could be eggs, egg casserole, bull’s-eyes or omelets)
Friday – bread (muffins, applesauce bread, banana bread, scones, cinnamon rolls- all of which come from the freezer!)
Saturday – Saturdays daddy is home with us so we usually have pao de queijo and bacon

Lunches ~ all are served with seasonal fruit and veg
Monday – sandwiches (lunch meat, pb&j, tuna)
Tuesday – soup (cheesy potato, broccoli cheese, baked potato, tomato, ramen noodles {every real food mama has some exceptions})
Wednesday – leftovers
Thursday – quesadillas (we will alternate through a few of these delicious looking ideas!)
Friday – burritos (banana, honey and peanut butter, brown bag, chicken or anything else we come up with!)
Saturdays in the summer are pretty much guaranteed grilling for lunch

Did you notice I don’t have Sundays listed? Sunday breakfasts are ffy (fend for yourself). The big kids get to pick any of the premade breakfast items and also prepare something for the their buddy (the little one assigned to them). I either put something in the crock pot early in the morning or a casserole in the oven before we leave for church. That way we aren’t scrambling around with growling bellies trying to figure out what to eat, and while eating out is nice, it isn’t always in the budget for our growing family of six. We eat on that big meal and other left overs all day so I only need to prepare one meal on Sundays. 🙂

I found a great (free) editable monthly meal planner over at No Ordinary Moments and used that to make my plan and hang on the fridge. Maybe I will laminate it each month? Hmm.. I’ll have to think about that. I do love to laminate things.

Ranch Chicken – I use my own ranch mix, not packaged and crushed cornflakes instead of breadcrumbs
