Taco Soup

One day last week I forgot to take my protein out of the freezer and when supper time came, well…I had to improvise.  What came out my impromptu supper has become one of Oscar’s favorite dishes! 

1 lb sausage (I used breakfast)
1 tablespoon minced onions
2 14.5oz cans diced tomatoes
2 15.5oz cans black beans
32oz chicken broth
3 Tablespoons taco seasoning
1 16oz can refried beans
handful of fresh cilantro
tortilla or corn chips for dipping

Toppings- all optional
sour cream
extra cilantro
green onions

Brown the meat with the onions and seasoning. Add everything except the chips and let it simmer 25 minutes or so. When it’s done, top it however you’d like!
