I’ve been working my way through Homemaking Ministries’ Free eCourse- Finding Joy in Your Home: Essential Habits for Christian Homemakers. One of the things she mentions in her videos is getting breakfast ready the night before. I usually have a plan for breakfast, but as far as it being ready in the morning- well I’ve never been that good.
Jamie specifically mentions overnight crock pot oatmeal. I started looking around on the web for a good recipe to try but each one I looked at had something I didn’t like about it. So I decided to make up my own and hope for the best. I am super excited to say that it turned out DELICIOUS!!!! So delicious that I need to share it with you.
I seriously plan to start making this at least twice a week.
Apple Banana Nut Overnight Crock Pot Oatmeal
- 2 cups old fashioned oats
- 4 cups water
- 1/2 cup brown sugar
- 1 tsp vanilla
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 apple, cored and diced
- 1 banana
- 1/3 cup peanut butter
Put everything in the pot, give it a stir, and cook on WARM for 7-8 hours. Seriously, it’s that easy.
This made enough for myself and my five kids to eat breakfast and still have some leftovers (about another two servings.)
A few notes about what I did-
- I used a frozen banana that I microwaved for 30 seconds to soften
- Spray coconut (or any other) oil on the crock walls to prevent sticking
- I cooked it on WARM in my 4.5 quart crock pot from 9 pm until 6 am and it came out PERFECT
