Pantry Cooking Day 3 PB Toast, More Beans, and Chicken Alfredo

We made it through Day 3 of pantry cooking week!

Today started off a bit rough. I planned on just doing blueberry oats again, but that wasn’t happening. The children nearly started a coup, but after some negotiations, we settled on peanut butter toast.


They didn’t have to eat oats again (not their favorite thing) and we managed to have a somewhat nutritious breakfast.

For lunch, we were able to do leftover beans and cornbread, which worked out nicely. Using up leftovers always makes me happy; I can’t stand waste.

Since my husband got home last night from a few days away training for work, I made his favorite meal, chicken alfredo. The chicken we just season, filet, and fry in butter on the stove. I make this super simple (and nearly carb free!) alfredo sauce. I’ve been using this recipe for about a year now and everyone loves it! To round out the meal, I steam broccoli and bake some Italian bread.

Walmart bakes fresh loaves and sells them for $1. HOWEVER, they put the day old ones at the back of the store and mark them down to .50. You better believe I stock my freezer with those bad boys. We use them for supper bread, pizza boats, chicken subs, french toast . . . all kinds of stuff!

Tomorrow is Saturday, which means two things in this house . . . farmers market and cinnamon rolls!
