Jambalaya ~ Large Family Style

This super easy semi-homemade version is sure to go far and fill those tummies!

  • 1 TBSP olive oil
  • 1 lb smoked sausage
  • 3 cloves of garlic
  • 1 onion (chopped)
  • 1 quart chicken broth
  • 1 box of jambalaya
  • 1 cup rice
  • 1 can of Rotel
  • 1 sweet pepper- any color (chopped)
  • 1 handfull (or can) of corn (if using can, drain it)
  • 1 can black beans (drained)


  1. In a large skillet over med/high heat add the oil, sausage, peppers, and onion. Give them a stir, then let then cook until the onions are soft.

  2. Add garlic and cook another 2 minutes.

  3. Add everything else. Stir to combine, and bring to a simmer.

  4. Cover and reduce heat to low and let it cook for 20-25 minutes until all the liquid is absorbed. Give it a good stir and you're ready to serve!

Recipe Notes

We use a combination of fresh cilantro, sour cream, hot sauce, and shredded cheese as toppings. Use any, all, or none! It's delicious plain too.
