This super easy semi-homemade version is sure to go far and fill those tummies!
In a large skillet over med/high heat add the oil, sausage, peppers, and onion. Give them a stir, then let then cook until the onions are soft.
Add garlic and cook another 2 minutes.
Add everything else. Stir to combine, and bring to a simmer.
Cover and reduce heat to low and let it cook for 20-25 minutes until all the liquid is absorbed. Give it a good stir and you're ready to serve!
We use a combination of fresh cilantro, sour cream, hot sauce, and shredded cheese as toppings. Use any, all, or none! It's delicious plain too.
